Sunday Morning Pancake Mix started as an experiment on our kitchen counter. A few years ago, my husband started making pancakes every Sunday morning for our family and while I embraced this fun, new tradition the health factor gave me some pause. In search of a compromise, we tried mixing whole grain flours and then milling bulk grains in a one-cup coffee grinder.

The final recipe includes nine freshly-milled, organic grains: wheat, rye, buckwheat, barley, brown rice, oats, spelt, milo and cornmeal, with a little flax for good measure. Dedicated to being a positive force in our food system, I procure high-quality, organic inputs as locally as possible. We've turned what once was a breakfast filled with over-processed, empty calories into a wholesome, nutritious meal that is still easy to prepare, locally sourced, and—most importantly--delicious! Heavier than a regular pancake but lighter than a hoe cake, Sunday Morning Pancakes boast a delightful flavor and hearty texture.
